Ingredients

4 tilapia fillets

2 tablespoons of margarine; low in fat

1/4 cup green bell pepper; chopped up

4 tablespoons chopped onion

1/4 cup toasted almonds; chopped up

1/2 cup fresh breadcrumbs

1/4 teaspoon oregano

4 tablespoons fresh lemon juice

1 tablespoon chopped cilantro; (or parsley)

1/2 teaspoon salt

2 cups of water

2 garlic cloves; crushed

1 bay leaf

1 teaspoon red pepper flakes

1 lime zest

Melt the margarine in a hot skillet over medium heat. Don’t let the butter brown. Add the green bell pepper and 2 tablespoons of the onion. Then fry the pepper and onion until the onion is transparent. Then add the almonds, breadcrumbs, oregano, a tablespoon of lime juice, cilantro, and salt. Mix well. Place the filling in the center of each tilapia fillet. Then roll up each fillet and secure with toothpicks. In a shallow baking dish, combine the remaining 2 tablespoons onion, water, garlic, bay leaf, red pepper, and the remaining 3 tablespoons lime juice. Arrange tilapia fillets in pan and bake at 400 degrees F. for 30 to 35 minutes, basting occasionally until tilapia flakes easily. Remove tilapia to a serving plate and garnish with thin strips of lime zest.
